Addictive Flourless Chocolate Zucchini Muffins

Ingredients
  

  • 1/2 cup almond butter
  • 1 large ripe banana
  • 1 egg
  • 3 tablespoons maple syrup honey or brown rice syrup would work as well
  • 1 teaspoon apple cider vinegar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons ground flax seed
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking soda
  • 1 cup shredded zucchini squeezed dry
  • 1/3 cup mini chocolate chips
  • 1/2 tablespoon chia seeds
  • 1/3 cup dried cranberries

Method
 

  1. Place everything but the last three ingredients into a bowl or high speed blender.
  2. Mash and mix by hand, or blend, until everything is incorporated.
  3. Mix in the zucchini, chocolate chips, cranberries and chia seeds by hand.
  4. Spray your muffin pan liberally with coconut oil or other non-stick spray.
  5. Bake at 375 degrees for 20 minutes.
  6. Let cool and enjoy!
