The Perfect Kale Salad – Work Lunch or Dinner Party

Ingredients
  

  • Salad:
  • 4 cups raw kale clean and torn into pieces
  • 1 cup raw shredded carrots
  • 1/2 cup dried cranberries
  • 1/2 cup toasted slivered almonds
  • Dressing:
  • 3 tablespoons olive oil
  • 6 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • juice from half a lemon
  • salt and pepper to taste

Instructions
 

  • Whisk all dressing ingredients together in the bottom of a large salad bowl. Add the kale and massage the dressing into the kale for 2-3 minutes. Sprinkle the rest of the ingredients on top and let sit for a minimum of one hour before serving. Enjoy!
